Perfectly fluffy and sweet while being a healthy and balanced breakfast, don't knock it 'til you try it, trust me!! This is perfect to make before a busy week and is loved by all ages!
1 ripe banana, mashed
1/2 cup of almond flour
1/2 cup of cottage cheese
3 tablespoons of almond butter
1/2 teaspoon of cinnamon or pumpkin pie spice
1 tablespoon of coconut oil
Add all the ingredients to a food processor and blend until smooth.
In a skillet over medium heat, add the coconut oil and spread it around the skillet so the surface is covered. Add a few tablespoons or a small ice cream scoop of batter and cook until a few bubbles appear on the surface. Flip and cook 1 minute longer. Transfer to a plate and repeat with the remaining batter.
Top with any of your favorite toppings like syrup, fresh fruit, or chocolate chips. Eat them fresh off the griddle or store them in the fridge and reheat for up to 5 days!
