Spaghetti Squash Mash
Are you ready to plate a dish like a pro? This spaghetti squash mash will not only look phenomenal with your main dish, but it has a lovely savory and sweet flavor that is a crowd-pleaser for all ages!
1 spaghetti squash
2 tablespoons of olive oil
1 tablespoon of garlic powder
Salt & Pepper
1 tablespoon of onion powder
1/4 cup of nutritional yeast
1/2 cup of milk (or almond milk)
Red chili flakes, optional
Preheat oven to 425 degrees.
Prick the spaghetti squash with a fork all over and place it in the microwave for 5 minutes. Once cool to touch, remove and place on a cutting board. Cut both ends off and then slice down the middle to scoop out seeds with a spoon.
Drizzle the inside of the squash with olive oil and season liberally with salt and pepper. Place on a parchment-lined baking sheet cut and seasoned side down and roast until cooked, about 40 minutes.
Once done, remove from the oven and scoop out the flesh with a fork. Place in a food processor with garlic powder, onion powder, nutritional yeast, milk, and red pepper flakes if you're using them. Pulse until mashed. Taste and season as needed. Enjoy!
Goes well with the pesto salmon in the photo - which you can find the recipe for here!
