Spaghetti Squash Mash

Are you ready to plate a dish like a pro? This spaghetti squash mash will not only look phenomenal with your main dish, but it has a lovely savory and sweet flavor that is a crowd-pleaser for all ages!




Ingredients:

  • 1 spaghetti squash

  • 2 tablespoons of olive oil

  • 1 tablespoon of garlic powder

  • Salt & Pepper

  • 1 tablespoon of onion powder

  • 1/4 cup of nutritional yeast

  • 1/2 cup of milk (or almond milk)

  • Red chili flakes, optional

Method:

  1. Preheat oven to 425 degrees.

  2. Prick the spaghetti squash with a fork all over and place it in the microwave for 5 minutes. Once cool to touch, remove and place on a cutting board. Cut both ends off and then slice down the middle to scoop out seeds with a spoon.

  3. Drizzle the inside of the squash with olive oil and season liberally with salt and pepper. Place on a parchment-lined baking sheet cut and seasoned side down and roast until cooked, about 40 minutes.

  4. Once done, remove from the oven and scoop out the flesh with a fork. Place in a food processor with garlic powder, onion powder, nutritional yeast, milk, and red pepper flakes if you're using them. Pulse until mashed. Taste and season as needed. Enjoy!
