Wow wow wow this dish is embarrassingly easy, but it will impress guests at a dinner party and even please your picky toddler!
Yields 4 servings
Ingredients:
4 salmon filets
Freshly cracked pepper
1 cup of premade pesto (you can make your own if you are feeling fancy!)
1 lemon
Method:
Preheat your oven to 425 degrees
Pat the salmon dry to remove any moisture so it roasts in the oven. Sprinkle with a large pinch of freshly ground pepper. Brush on the pesto sauce so that the top and sides are covered
Roast until cooked through, about 15-20 minutes depending on the thickness
Squeeze lemon juice on top once it's done and enjoy immediately!
