What to do with Leftover Pumpkin Puree or Pumpkin Pie

Thanksgiving is almost upon us, and in a couple of days you might have some pumpkin puree and pumpkin pie spice leftover...or even a few slices of pumpkin pie! This recipe is somewhere in between a smoothie and a milkshake, and you get to decide how healthy, sweet, or creamy you want to make it. No matter what, you'll end up with a delicious treat.



Pumpkin Pie Smoothie or Milkshake (Pick your own adventure):


Ingredients:

  • 3/4 cup of pumpkin puree (or the filling of your leftover pie)

  • 1 tablespoon of pumpkin pie spice

  • 1 cup of milk of your choice

  • Up to 1/4 cup of maple syrup (depending on how sweet you want it)

  • 1 scoop of protein powder of your choice (vanilla or chocolate would both work)

  • 2 teaspoons of vanilla or maple extract

  • Feel free to throw in a scoop of vanilla bean ice cream or a bit of cream

  • 1 cup of ice


Blend it all together and enjoy topped with some white chocolate chips or a sprinkle of cinnamon!
