Watermelon Salad

Nothing says summer like some sweet and juicy watermelon - not only is it super refreshing but it's the perfect season for flavor and sweetness! This salad has so many layers of flavor and crunch, it's so fresh for a summer cookout

Yield: 6 servings



  • 4 cups of watermelon, cubed

  • 4 cocktail cucumbers, thinly sliced

  • 8oz of feta, crumbled

  • 1/2 red onion, sliced into half-moons

  • 1 cup of fresh mint, chopped

  • 2 tablespoons of fresh chives, chopped

  • 1/2 cup of pine nuts, toasted


  • 1/4 cup of olive oil

  • 3 tablespoons of balsamic vinegar

  • Juice from a lemon

  • 2 teaspoons of honey

  • Salt

  • Pepper


1. In a salad bowl, arrange the salad ingredients. 2. To make the vinaigrette whisk the olive oil, balsamic vinegar, lemon juice, and honey in a glass jar. Season with salt and pepper. 3. Drizzle the vinaigrette over the salad. Sprinkle with salt and pepper. Allow to sit for 15 minutes to soak in those delicious flavors and enjoy!
