The ultimate meal prep salad that will last you all week. Perfect for on the go and for all ages.
1 cup of cooked quinoa
2 cups of chicken stock
1 cup of thinly sliced cocktail cucumbers
1 cup of sliced grape tomatoes
½ cup of roughly chopped mint
1/4 red onion, diced
1/4 block of feta, crumbled
Kosher salt & freshly ground pepper
2 cloves of garlic, minced
¼ cup of extra virgin olive oil
4 tablespoons of apple cider vinegar
Mix the dressing ingredients and shake until combined. Add salt and pepper to your liking
Assemble the salad and top with the dressing. Can be stored in an airtight container in the fridge for up to a week.
Tip: would also be very good with roasted veggies.
