All the pumpkin fans out there rejoice! Who doesn't love to get into the holiday spirit with their palate?
Ingredients:
2 cups of old fashioned oats
1 tablespoon vanilla extract or maple extract
1/3 cup of pumpkin puree
1/4 cup of maple syrup or honey
2 tablespoons plus 1 teaspoon of pumpkin pie spice (divided)
1 cup of white chocolate chips
2 tablespoons of coconut oil
Directions:
Mix your oats, vanilla extract, pumpkin puree, maple syrup, chopped almonds, and 2 tablespoons of pumpkin pie spice until they're combined.
Scoop the mixture into a lined muffin tin and place it in the freezer for 2 hours.
When the cups have 10 minutes left in the freezer, melt the chocolate chips with coconut oil, and 1 tsp of pumpkin pie spice in the microwave or over a double boiler
Spread the melted white chocolate mixture over your cups.
Place the whole tin back in the freezer for an hour, and then they are ready to be enjoyed! I store them in the fridge for up to a week (if they last that long!)
