Chocolate Almond Butter Granola Bars

Need a quick energy-filled snack to get you through the afternoon? Have a sweet tooth? This granola bar has you covered.





Ingredients:

  • 2 cups of old fashioned oats

  • 1/4 cup of maple syrup or honey

  • 1/4 cup of creamy nut butter - I love almond butter

  • 1 tablespoon of vanilla extract

  • 1 tablespoon of chia seeds

  • 2 tablespoons of cacao powder

  • 1 cup of melted chocolate chips, I use Lily's dark chocolate baking chips

  • 1 teaspoon of coconut oil

  • 1/2 teaspoon of flaky sea salt

Directions:

  1. Mix together the oats, sweetener (honey or maple syrup), nut butter, vanilla extract, chia seeds, and cacao powder. I have found that mixing everything together with a large spoon and pressing against the sides of the bowl to have it all come together and make a cohesive mix.

  2. Line a small casserole dish with parchment paper and spread out your granola mix evenly - place in the freezer for 2 hours.

3. Melt the chocolate chips with coconut oil over a double boiler, stirring frequently until mostly melted. Take off heat and gently stir until fully melted. Lather on top of the oat mixture, sprinkle the sea salt on top, and place back in the freezer for an hour.


4. Take the dish out of the freezer, cut into bars, and store them in the fridge for the week in a glass container or zip-top bag!
