I don't know about you guys, but even when it's cold outside, I just love the crisp and fresh flavors of a delicious salad. This one has tons of fall flavors and is so easy to throw together in a pinch to go with a meal, or have a healthy weeknight dinner with some protein you have on hand
Ingredients:
1 bag of baby spinach
1 bag of arugula
1/2 red onion, sliced into half-moons
1/2 pickling cucumber, sliced into half-moons
1 lb of grape tomatoes, sliced in half lengthwise
1/4 cup of salted roasted pumpkin seeds
1/4 cup of dried cranberries
1/4 cup of olive oil
1/2 cup of freshly grated parmesan cheese
3 tablespoons of good balsamic vinegar or a balsamic glaze
Directions:
Super easy - assemble your salad in a large bowl and toss it with olive oil.
Top with freshly grated parmesan cheese and drizzle with the balsamic vinegar glaze. Enjoy!
