Apple Pie Baked Oatmeal

Who says you can't eat dessert for breakfast? Take the classic apple pie flavors, mix it into a filling and delicious oatmeal bake - boom, you've got breakfast for the week! I won't even judge you if you put a little vanilla ice cream on top


Yields 4-6 servings


Prep time: 6 minutes

Cook time: 20 minutes

Total time: 26 minutes


Ingredients:

  • 2 cups of old fashioned oats

  • 2 cups of almond milk

  • 1/2 Honeycrisp apple, cut into 1/2 inch cubes

  • 1/2 of a ripe banana, mashed with a fork into a paste

  • 1 tablespoon of chia seeds

  • 1 tablespoon of flaxseed

  • 1 tablespoon of brown sugar (or 1 tsp monk fruit sweetener)

  • 1 teaspoon of vanilla or maple extract

  • 2 tablespoons of cinnamon, apple pie spice, or pumpkin pie spice


Directions:

  1. Preheat oven to 350

  2. Sautee the apples with 1 tbsp of cinnamon/apple pie spice/pumpkin pie spice, over medium-low heat. Once it's caramelized, pour the mix into a small bowl and allow it to cool.

  3. In a large bowl, mix in the rest of the ingredients and half of the sauteed apples. Pour into a baking dish and top with the remaining sauteed apples.

  4. Bake for 20 minutes.

  5. Store in the fridge for the week to be enjoyed!
