Summers in Texas are hot hot hot and with the rising temps, the idea of turning on the oven is not so appealing. Thankfully we can put together a filling and fresh salad that will give you all the feels of a homecooked dinner, and it is such a great salad to have for lunch or at your nearest pool or beach!

Yields: 4 salads
Dressing:
1/4 cup of balsamic vinegar
3/4 cup of extra virgin olive oil
Salt & pepper
Salad:
1 cup of strawberries cut into quarters
5 slices of bacon, cooked and crumbled (I prefer turkey bacon because I'm nutso)
3/4 cup of feta, crumbled
2 chicken breasts, sliced (to save time and avoid turning on your oven just slice up or shred some chicken breast from a grocery store rotisserie chicken - one of my favorite weeknight meal hacks)
Little Gem Lettuce, washed (alternatives: baby spinach or kale would also be yummy!)
Not pictured but would also be delicious additions:
Candied pecans
Grape tomatoes, sliced in half
Avocado, diced
Directions:
In a small bowl, pour in the balsamic vinegar then begin to whisk, slowly add the olive oil until the vinaigrette is emulsified. Add a pinch of salt and pepper to taste.
Assemble the salad and pour the dressing over the top. Enjoy!
