Even though Fall is on its way (and that means Pumpkin Spice season!), salads still have a place in my heart for an easy and healthy lunch or dinner option. This steak salad gives you a hearty protein and tons of flavor - yum!
Ingredients:
1-1/4 lbs sirloin steak, fat trimmed
1 teaspoon of salt
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon of paprika
2 tablespoons of olive oil
1/2 red onion, thinly sliced
2 heirloom tomatoes, cut into wedges and seasoned with salt and pepper
3 tablespoons of roasted salted pepitas
1/2 cup of feta cheese
1 container of mixed greens
Dressing of choice, I used Asiago Cesar from the brand Briannas
Directions:
In a small bowl, combine the spices for the steak: salt, garlic powder, onion powder, and paprika.
Cut the steak into 1inch cubes and place it into a bowl. Mix in the spice blend. until fully covered.
In a large cast-iron skillet or non-stick pan over medium-high heat, heat olive oil. Once it's hot, place steak cubes in one layer in the pan. Cook until browned, about 3 minutes, then flip and cook for another 2. Remove and set aside on a paper towel-lined plate.
Assemble your salad, fill a salad bowl with freshly washed greens, and top with tomatoes, red onion, pepitas, feta, steak, and dressing to your liking. Enjoy!
