These brownies are slightly healthy as they have no flour or dairy, but still plenty of fudgy flavor to satisfy your sweet tooth! They are light and the perfect treat for everyone in the family.

Ingredients:
Graham crackers
1 cup of creamy peanut butter, try an find a brand that is runny and not gloopy (I personally love Costco and Aldi's brands)
1/4 cup of maple syrup
1/2 cup of dark brown sugar
2 large eggs
1 teaspoon of vanilla extract
1/3 cup of cocoa powder
1 tsp of baking powder
1 1/2 cups mini marshmallows
1/2 cup of semi-sweet chocolate chips
Directions:
Preheat oven to 350 degrees and line an 8×8 baking dish with parchment paper and grease well. I actually sprayed it with avocado oil rather than brushing butter around, and it worked out perfectly since the avocado oil is a really neutral flavor
Add graham crackers for your bottom layer in the dish
To make the brownie layer, whisk together the peanut butter, maple syrup, brown sugar, eggs, vanilla, cocoa powder, and baking powder in a large bowl until combined
Fold in the chocolate chips and 1/2 cup of the mini marshmallows
Pour the batter over the graham cracker layer and spread it around evenly - be careful not to break the graham cracker "crust"
Top with the remaining 1 cup of mini marshmallows
Bake in the oven for 25 minutes (or until the toothpick comes out clean)
Allow to cool and then cut and enjoy! These will keep for 5 days in an airtight container, feel free to pop them in the oven for a few minutes to reheat them back to fresh warm goodness!
