Jordan's Corner - Turkey Zucchini Gnocchi

This recipe might be the *key* to an easy weeknight meal! (So sorry for the pun, but sometimes you have to go with it)


This just happened to be what I had handy in the fridge and freezer on a random weeknight, and it all came together in one pan and less than an hour - perfection!




Ingredients:

  • Olive oil

  • 1 lb of ground turkey

  • Salt & pepper

  • Italian seasoning

  • 1/2 small onion, diced

  • 2 cloves of garlic, minced

  • 1 zucchini, cut into half-moons

  • 10 oz of frozen cauliflower gnocchi

  • 1 tablespoon of butter

  • 1 jar of marinara sauce

Directions:

  1. Heat a skillet over medium-high heat, drizzle or spray with olive oil and add your ground turkey to the pan. Season with a bit of Italian seasoning, salt, and pepper then brown the turkey until it's no longer pink. Set aside the turkey and add a bit more olive oil to the pan

  2. Add the onions to the pan and sauté for about 1 minute, followed by the garlic and zucchini. Season with salt and pepper and sauté all your veggies for 1-2 minutes

  3. Add the frozen gnocchi and 1 tablespoon of butter (to give it some rich buttery flavor), you don't need to add extra liquid for the gnocchi since it will pick up some of the moisture from the vegetables. Cook everything for 3-5 minutes until the zucchini and gnocchi are tender

  4. Add the cooked turkey back into the pan, and pour a jar of marinara over everything. Stir to coat and mix evenly and cook for 1-2 more minutes

  5. Serve up with some parmesan or mozzarella on top, garlic bread, or maybe a nice glass of wine, enjoy!
