The perfect cozy lunch during this record-breaking snow day here in Dallas!
Ingredients:
Florets from 1/2 of a medium broccoli head, steamed for 6 minutes
1 lemon, zested and juiced
Salt & pepper
1 tablespoon avocado oil
4 slices of bread
1/4 cup cheddar cheese, shredded
Directions:
Once your broccoli has steamed transfer to a bowl and add a teaspoon of lemon zest, a few squeezes of fresh lemon juice, salt, and pepper.
Heat a skillet over medium-low heat and pour in avocado oil.
Assemble your sandwich by dividing the ingredients in half, layer cheese over one of the slices of bread, add chopped broccoli, and then more cheese on top. You can always add sliced onions, chicken, pickles, and anything else that you fancy! Top the other piece of bread on top, to create the sandwich.
4. "Grill" your sandwiches in the skillet, turning sandwiches over once until the cheese melts and the bread is evenly toasted. When first adding your sandwich I press down with something heavier like a small saucepan to really ensure the bread is evenly toasted. Once you flip it, you can cover the pan with a lid to ensure the cheese melts evenly.
