So quick, easy, and nutritious! Simple ingredients like a cod filet, lemons, and a little bit of seasoning come together to make a perfect main dish to go along with some vegetables and rice or quinoa - such a great weeknight dinner
Ingredients:
4 cod fillets, skin removed - or as many as you need to make!
Salt & pepper
1 teaspoon of Old Bay seasoning
2 lemons
Olive oil
1 chive, chopped
3 tablespoons of fresh parsley, chopped
Directions:
Preheat the oven to 400 degrees.
Pat the fish dry with a paper towel, this will remove all moisture and give a nice crisp outside. Place the filets on a rimmed baking sheet lined with parchment paper.
Season the fish with a pinch of salt, pepper, Old Bay seasoning, and squeeze the juice of one lemon over the fish. Slice the other lemon into thin circles and rest on top of the filets.
Brush olive oil over the fillets and sprinkle with the chives.
Place the baking sheet into the oven and cook for 10 minutes, until cooked - you can tell it's cooked when the fish is no longer translucent.
Enjoy! This dish goes great with some broccolini or Brussels sprouts
