Ingredients:
Seasoning mixture
1 teaspoon of dried parsley
1 teaspoon of dried chives
1 teaspoon of dried dill
2 cloves of garlic, minced
1/4 teaspoon of cayenne pepper
Salt & pepper
2 salmon filets
1 Lemon
1/4 cup of scallions, thinly sliced
Avocado oil spray
1 russet potato, sliced into very thin coins
Salt & pepper
Directions:
Preheat the oven to 400 degrees.
Combine the seasoning mixture and season the salmon with half of the seasoning mixture. Top with a squeeze of half of the fresh lemon, half of the scallions, and a few spritzes of avocado oil.
In a bowl mix the potatoes with the other half of the seasoning mixture, scallions, and avocado oil.
In an even layer, place the potatoes in a baking dish and then place the salmon filets on top. Cook for 12-15 minutes. Salmon should have an internal temp of 140 on a thermometer.
Remove salmon from baking dish and place on a plate and tent with foil. Place the baking dish with the potatoes back in the oven and allow to continue to cook for another 7 minutes until done. Your knife should easily go through the potatoes without any resistance.
Top the fish and potatoes with a small squeeze of fresh lemon juice and enjoy!!
